For a quick pesto, try this simple recipe:

  1. Peel & bash 1 garlic in a pestle and mortar with a pinch of sea salt.
  2. Pick a good handful of basil leaves, add with 50g of dry-toasted pine nuts (or walnuts), and pound everything to a coarse paste.
  3. Drizzle in 2-3 tbsp cold-pressed rapeseed or olive oil and muddle together
  4. Add 50g grated Parmesan, adding a splash of water if you like it a little runnier, then continue bashing and pounding until smooth.

That’s it! Season with black pepper & a pinch more salt if needed. Stir through cooked pasta or boiled new potatoes, or drizzle over some fish or meat as you finish cooking. It’s incredibly versatile – we even add a drizzle to a tomato salad for an extra boost.
