Building on the popularity of our Indian 8 Spice Collection, our Indian 12 Spice Collection is a larger set of 12 incredible spices used in Indian cuisine & includes our own Garam Masala blend plus our versatile Tandoori Rub.

Containing full size pots of our Cardamon Pods, Ground Ginger, Turmeric, Ground Coriander, Whole Cloves, Ground Cumin, Bay Leaves, Cayenne Pepper, Ground Cinnamon, Curry Powder, Garam Masala & Tandoori Rub. With this collection, you’ll be able to make so many gorgeous meals with layers of flavour & keep your store cupboard well-stocked at the same time.

Bay Leaves
Bay Leaves are one of the few herbs that impart a better flavour when dried rather than fresh. Bay leaves have been used as far back as ancient Greece & is still used in many European cuisines, particularly in France and the Mediterranean, as well as across Asia and the Americas. Use whole to flavour soups, meat, stews, seafood (our Classic Bay seasoning is bay-rich & incredible with crab!), vegetable dishes and sauces. Remove before serving & certainly before freezing any leftovers.

Cloves
Cloves are widely used in the cuisine of Asian, African, & Middle East, giving flavour to meats, sauces, marinades & curries. They compliment the flavour of pork, poultry or gammon & are often seen studding a roast ham at Christmas. Used also in Ayurvedic medicine, they contain many compounds & essential oils to ease toothache & help digestion, as well as many other ailments.

Cardamon Pods
Cardamon Pods (or Cardamom) have a unique taste with an intensely aromatic aroma. It is a common ingredient in Indian cooking as well as Sweden & Finland where it is used in traditional baked treats. By weight, it is the world’s third-most expensive spice, beaten only by Saffron & Vanilla.

Ground Ginger
Ground Ginger is citrusy, warm & fragrant, another store cupboard essential. A key ingredient in any World cuisine, ginger is also prominent in Ayurvedic medicine for its cleansing & detoxifying properties. Lending itself to use in both savoury and sweet dishes, it is a popular spice in Asian cuisine & can be added to soups, curries, jams, pickles, puddings, biscuits, breads & scones. Stir into marinades, dressings, sauces & dips. It works particularly well with chicken or a robust fish and blends well with fruit & vegetable dishes.

Cayenne Pepper
Cayenne Pepper is a very popular spice in a variety of cuisines & usually found in powder form. It is also a key ingredient in a variety of hot sauces, particularly those employing vinegar as a preservative. Dust potatoes or root veg before roasting for a spicy twist, or add a pinch to chillies, stews & stir fries. With a Scoville scale between 30,000 – 50,000 it is hotter than jalapeños but less than chillies like the Bird’s Eye, Habanero & Scotch Bonnet. Because of its (somewhat) lesser heat, some of the fruitiness does come through, although it does still pack a punch!

Ground Coriander
Citrusy, fragrant Ground Coriander has a lemony, citrusy flavour & is a key ingredient in so many dishes. Try mixing with Paprika & rubbing on a flattened chicken breast for a quick meal. Added to tagines, curries & stews, it partners well with chicken, pork & vegetables. Try a pinch on sweet potatoes before roasting or add to cous cous or rice dishes.

Ground Cumin
Our pungent, earthy Ground Cumin has a very distinctive aroma & taste due to its essential oil content. Cumin helps to add a warming, earthy feeling to food. It enhances the appetite, taste perception & digestion. In the Ayurvedic system it is associated with the treatment of fever, loss of appetite & more. There are also many reported pharmacological effects as Cumin is thought to have some anti-diabetic, immunologic, anti-epileptic, anti-tumour & antimicrobial activities.

Turmeric
Rich, golden yellow Turmeric powder is a store-cupboard essential. One of the active ingredients, cur cumin, has a distinctly earthy, slightly bitter, almost peppery flavour with a mustardy smell. As well as providing flavour, it imparts a rich yellow colour to food like curries & is also widely using in pickling, mustards and is even popular as a saffron substitute in rice dishes. As well as being a vital part in many Asian cuisines, curcumin has anti-inflammatory, antibacterial, antioxidant & antiviral characteristics; other compounds have antibacterial & antifungal properties too. Turmeric powder is playing an increasingly popular part of many modern diets as its health benefits & medicinal qualities are becoming more widely understood. Turmeric Milk or Golden Milk is one of the most indulgent recipes using this fabulous spice.

Ground Cinnamon

Ground Cinnamon is used widely both for sweet & savoury dishes, from cakes & tagines to sauces & desserts. In many ways, it can be more versatile than sticks & adding a pinch into desserts, porridge & savoury dishes adds character & depth. Mulled drinks or stewed fruits with cinnamon, especially apples, have a lovely warmth without being actually spicy-hot. In the Middle East, cinnamon is often used in savoury dishes of chicken & lamb. Indeed, it is one of the ingredients in our Ras-el-hanout. For centuries, Cinnamon has been used medicinally for its warming property, to aid digestion & treat fevers.

Curry Powder

Our rich, mild Curry Powder is a blend of coriander, pepper, mustard, garlic, salt, turmeric, fenugreek, chilli, fennel & cassia. Apart from adding depth of flavour to a curry, a teaspoon when cooking rice or noodles gives them a Singapore-style kick! One of our favourite ways to use it is dusting scallops before quickly frying them, infusing them with delicate layers of spice without being spicy-hot. Dust onto fish fillets, pinch over roast potatoes or veg – the list is endless!

Garam Masala

A store-cupboard essential & a staple of Indian cookery, our freshly ground Garam Masala is a balance of incredibly fragrant spice. Use as an addition to any classic Indian dish or as a standalone spice blend in its own right: a pinch on lamb cutlets before cooking as normal gives a huge flavour boost. Rich, earthy & fragrant, this mild blend also works well with chickpeas, vegetables, potatoes & more. Add a teaspoon to yoghurt with a squeeze of lemon juice for a terrific & simple marinade. Perfect for any slow food or for spicing up samosas, flat breads or pitta breads – try a pinch on scrambled eggs too!

Tandoori Rub

Our Tandoori Rub is a classic blend of Indian spices gives a beautiful flavour to any dish. It also has a generous amount of our own freshly-ground Garam Masala for extra depth – & there’s NO sugar or fillers. Rich, earthy & fragrant, this mild blend gives a gorgeous richness to lamb dishes, chickpeas, roast vegetables, potatoes & more. Perfect for any slow food or for spicing up BBQ chicken – try it in samosas or add a pinch to flat breads or pitta breads before warming them in the oven for a few minutes. Add 1-2 tsp to yoghurt with a squeeze of lemon juice for a terrific & simple marinade, perfect for for chicken or prawns.
