Oregano is undoubtably one of the most important culinary herbs & one of the few where the dried is actually more flavourful than the fresh herb. It has a highly aromatic & ‘warming’ taste with its use most prominent as the staple herb of Italian-American cuisine. In fact, it is often thought of as the ‘pizza herb’ & frequently associated with fried or roasted vegetables, meats & fish. It also pairs well with spicy foods, more common in South Italy than the North where Marjoram is sometimes preferred. In certain cuisines, it appears with salt, pepper & paprika on the table for seasoning food. A sprinkle over feta cheese with a drizzle of Sicilian Lemon oil is one of our favourite ways to use it, either as a Greek salad or served with barbecued meats or fish.
Oregano contains a naturally occurring source of salicylates and is best avoided by people eating a salicylate free diet.
